Here (other Bacardi classics) the Pina Colada ($21) sips smoothly from a fresh pineapple and Three Dots and a Dash ($17) adds Falernum, Pimento, honey, lime bitters. There’s more than a hint of the tropical in the 40 rums of The Cliff Dive back bar. The biggest cup – Bacardi, Cognac, Peche, Lemon and Prosecco – is for three. Creative drinks director Michael Chiem is sharing more tiki love with inspirational new cocktails from 6pm Wednesday to Saturday. Longhouse clubbing continues after 11pm but the new rogue starts with satay street food and lounge chill earlier in the evening.
