I’m a bit of a girl about town. And drinking is part of going out. That means taxis. When I arrived at the Pullman Hotel Sydney last night, doorman Luke was there to open my taxi door. (Other hotels take note: I don’t remember the last time that happened.) But it gets better. When he learnt I was attending the rooftop party to celebrate the announcement of my good friend Chef Justin North as Culinary Ambassador to the hotel group, he accompanied me to the meet and greet with the hotel marketing manager. Impressive.
Which hotel, you might ask? I was at the Pullman Hotel College Street.
And the night only got better.
My friend was beaming. He pours his heart and soul into everything he does. This is not a naming only stint. It’s been 12 months in the making. And there is resonance between North’s food philosophy and the direction of Pullman Hotels and Resorts.

Q Dining at Pullman Quay Grand Sydney Harbour will be the first restaurant to launch with North’s consultation. Due to open in January 2014, Q Dining will take a micro-seasonal approach and draw on its location serving up the freshest catch of the day. From cutlery to the ingredients, North has worked with Q Dining Chef Daniel Simpson to create a stand-alone dining experience on Sydney Harbour.
Following on from the launch of Q Dining, North will oversee a roll-out of signature dishes to feature at each of the Pullman restaurants around Australia. He will also provide guidance to localise the Tapastry by Pullman concept which brings together local flavours in a series of small plates available in bars located within the hotel group.
North will also offer guidance with culinary appointments and assist with the training, development and mentoring of food and beverage staff throughout the Pullman brand in Australia.
