‘The Wise’ Wine and Tapas bar in Prahran promised to be a walk down memory lane where one could immerse themselves in a world of nostalgia and culinary delights. And boy did it deliver.
Walking through the doors to the Wise’s launch party on Thursday evening, it was abundantly clear that the owners Gregory Young and Jessica Dalziell, have achieved the funky and quirky “old professors style study” look they were going for . I of course, being a massive nerd, spent hours reading the wondrous quotes from philosophers and poets that are plastered and painted onto the unique ceiling.
The Wise isn’t all about their “looks” even if some of the most beautiful people of Melbourne turned out to welcome them into the fold at their launch on Thursday. The Wise incorporates a tapas style selection allowing you to select dishes from all around the globe, including Andalusian Pescado, Albondigas en salsa de almendras (handmade lamb meatballs, pan fried and served in almond sauce) through to the traditional Spanish Paella.
The Wise has a fun, friendly atmosphere and the perfect spot to catch up with friends to unwind or, with all of their ingredients locally sourced, enjoy a relaxing Sunday brunch with the family.
A word to the wise, make sure you get down to ‘The Wise’ sooner rather than later.
