2013 Electrolux Appetite for Excellence – applications for 2013 open on Monday, 4th February.
The program has earned firm support from Australia’s culinary heavyweights with the country’s most acclaimed panel of judges, supporters and mentors including last year’s Guests of Honour Chef Peter Gilmore (Quay) and Chef Mark Best (Marque) as well as co-founder Chef Luke Mangan.
When I was first cooking commercially in restaurants I saw little of the industry support that I observe today. I’m glad that has changed. And that is just one of many reasons why I am really proud to be an ambassador for the Electrolux Appetite for Excellence – Young Chef, Young Waiter, Young Restaurateur – program.
Having toured now in each of the last few years with the finalists on a state produce tour I can personally say that this fantastic initiative is so much more than an awards program. It provides depth of knowledge and ongoing contact with the best of the best in hospitality peers. It builds networks around Australia of hospitality contemporaries. I’ve watched as the finalists all stay in contact each year and observed how they encourage and support and provide ongoing assistance to each other in their careers. And each year this gets stronger.
Peter Gilmore explains, “You’re not going to be an overnight sensation… It’s about working for good people and building up your skills. The Electrolux Appetite for Excellence program is an extension of this: building a network between front and back of house, strengthening the two as a functioning team. With a really strong love of the industry and a real philosophy of what the restaurateur wants to convey to his or her audience, one can go far.”
I’ve had the great privilege of seeing the growth and development of the finalists and winners from previous years: 2010 winner Chef Soren Lascelles is now working in Ho Chi Minh city after winning the People Choice Award at the S. Pelligrino World Cup, and the next year Chef Richard Ousby went on to win actual S. Pelligrino World Cup for Australia. Our future is in good hands.
