


Have you been to the bar at the back of Red Lantern on Riley? The restaurant opened not so long ago (after a 10 year wait since the first Red Lantern restaurant – in Surry Hills – opened.) Red Lily opens onto the laneway behind. The bar is an intimate space with fab-u-lous Asian inspired cocktails and Vietnamese beers and street food. Lucky enough to celebrate a porky kind of birthday there with my good friend Mitch Edwards of Porkstars – of course THE drink of the night was a porky kind of cocktail – I loved it so much I asked for the recipe. The cocktail photo was snapped on my iPhone, but you get the picture.. It’s for drinking (not looking at) anyway..

And of course her brother, celebrity Chef Luke Nguyen was there on the night too. I even snuck into the kitchen to check out what was cooking..

Crunch Manhatten
45mls of Marker’s Mark bourbon
15mls of sweet vermouth
5mls of Chambord
1 teaspoon of Cranberry sauce
Dash of Angostura bittersShake all ingredients and double strain into a martini glass. Garnish with a long piece of oven baked crispy bacon or prosciutto.
