
A Bollywood feast this week celebrated CRAVE Sydney International Food Festival at Blue Sydney, Taj Hotel Woolloomooloo. Hotel General Manager Sanjay Umashankar explained that Blue draws on food from various regions of India, and updates the traditional Indian dishes and flavours for international travellers in the Sydney a la carte setting.
Our delicious feast of four courses started with a really sumptious soup that was light and summery yet rich and spicy. And then we were ready for more dining and entertainment enjoyment.

roasted heirloom tomato and cilantro decoction

varqi crab
filo & fresh crab meat layered to perfection
shami kebab
lamb mince w a roasted sesame, coriander & mint dip
amritsari machli
curry leaves and chilli infused fish coated in gram flour

haldi chilli fish
tumeric & chilli spiked basa fillet served on a bed of tempered spinach
or
hyberabadi style chicken biryani
an aromatic rice & chicken delicacy served w a pomegranate raita
four
mango kulfi
mango flavoured ice cream served w fruit compote & champagne soaked noodles

I can’t stop thinking about that chicken dish with the pomegranate raita. So simple, yet so tasty! It’s been a while since I’ve had a dish that drove me crazy (in a good way!) like that.
