Cavolo Nero + Borlotti Bean Minestrone : Chef Stefano Manfredi

Many thanks to acclaimed Chef Stefano Manfredi for sharing this recipe for minestrone. Stefano Manfredi shared a recipe for minestrone on the SBS television show Italian Food Safari which inspired me to ask if he’d like to share his minestrone recipe with you on Inside Cuisine. Stefano Manfredi is currently the Executive Chef at Bells at Killcare and the luxury Australian resort Pretty Beach House and will open at new signature restaurant at Star City later this year. Chef has also been featured in the current series of Australian Masterchef.

Cavolo Nero and Borlotti Bean Minestrone

Ingredients: Serves 10

1/4 cup extra virgin olive oil
2 diced onions
8 cloves of garlic, each cut into 3-4 pieces
1 sliced celery heart (including the tender light-green leaves)
1 leek, trimmed and chopped into 1cm-thick half rounds
2 cups Savoy cabbage, chopped into bite-sized pieces
150g cavolo nero, roughly chopped
2 bay leaves
1 cup fresh borlotti beans
350g of peeled and diced waxy potatoes
200g peeled Italian tomatoes, mashed
1 cup parsley, roughly chopped
Salt and pepper
60g parmesan rind, cut into 1cm cubes
Freshly grated parmesan

Heat the olive oil in a heavy bottom soup pot. Add the diced onions, garlic, celery heart, leek, cabbage, cavolo nero and bay leaves. Lightly fry the vegetables for 2-3 minutes making sure they don’t colour. Add the beans, potatoes and tomatoes and stir. Cover the ingredients with water. Once the soup comes back to the boil, turn down to a simmer. Add a couple of good pinches of salt and stir. Keep simmering for 20-25 minutes. Add the parsley and parmesan rinds and simmer for another 5 minutes. Turn off the heat, correct seasoning with salt and freshly ground pepper and serve with plenty of grated Parmesan and crusty bread. It’s much better the day after.

    It’s called Ribollita and you’re meant to put the bread into the soup and not just serve it with the soup.
