Chicken Fettucini with Creamy Pesto Sauce

Have you ever wondered what happens behind the scenes at a photo shoot? A couple of weeks back the Game Farm were kind enough to invite me to sit in on the shoot for their next cookbook. Photographer George Mourtzakis showed us the ropes during the cookbook shoot in his Redfern studio. In case you didn’t already know it’s all about lighting. Oh and he’s got some pretty good camera kit too.

Here’s one of the recipes that food stylist Janet Mitchell cooked up fresh for the camera. It will be in the next Game Farm cookbook. Here’s your preview, the recipe for Chicken Fettucini with Creamy Pesto Sauce, oh and a chance to win 1 of 10 of the cookbooks generously provided for our readers by the Game Farm. Chicken Fettucini with Creamy Pesto Sauce

Serves 4

500g Game Farm Corn fed Chicken BreastsSea salt and ground pepper
1 tablespoon olive oil
500g fettuccine
1/2 cup purchased Rocket or Basil pesto
Grated zest of 1 lemon
2/3 cup cream

Place corn fed chicken breasts between two pieces of plastic wrap. With a meat mallet or rolling pin pound the corn fed chicken to an even 1cm thickness. Season with salt and pepper.

Heat the oil in a large nonstick pan and cook the corn fed chicken over medium heat until golden brown and cooked through, 3 to 4 minutes per side. Slice each piece across the grain into 4 or 5 strips; cover and set aside to keep warm.
Meanwhile, cook pasta according to package instructions. Reserving 1/4 cup cooking water, drain the pasta and return to pot.

In a small saucepan, heat pesto and grated lemon zest over low heat with cream.
Toss pasta with reserved cooking water and half the sauce. Divide among shallow bowls; top with corn fed chicken.

Drizzle with remaining sauce.
