Luke Mangan’s Salt Tokyo menu in Sydney

Chef Luke Mangan dug deep and following the disasters of the Japanese tsunamis organised a fundraiser at short notice at Glass Brasserie Sydney on Monday 4th April 2011. The menu was inspired by Luke Mangan’s Japanese restaurant Salt Tokyo with proceeds going to the Japanese Relief Appeal.

Perhaps it was not quite in the spirit of the night but although I really went along to aid Japan in my own small way, I was also intrigued to taste Luke Mangan’s dishes from his Japanese restaurant. It was an incredible menu with extraordinary flavours with the subtlety yet depth that I consider would be enjoyed in the restraint of Japanese food. As a regular of his Australian venues it was a great opportunity to experience his versality and the differences. Happily though we finished the night with one of my favourites, his signature Liquorice Parfait which is always on his Sydney menu and is just a fabulous dessert at anytime.

My dinner companion for the evening, Marlo Perry, and I decided we’d add our own touch to the night and ordered a couple of rounds of Luke’s cocktail The Australian to round off our Monday (school) night.

Seared tuna with soba noodles & wasabi

Hiramasa kingfish sashimi, ginger, eschallot, Persian feta

Spiced coconut & prawn broth, prawn

Blue eye cod with foie gras mustard crust, caramelized apple, miso broth

Slow roasted fillet of beef, wasabi, beef consomme

Liquorice Parfait

      yes it was Marlo – though I felt like such a dowdy wallflower sitting next to you in that stunning brand new Vivienne Westwood on its first outing! x
