dinner with THE BAKER : Pino Locantro


Thanks to Pino Locantro and New Holland publishers for the latest cookbook giveaway on Inside Cuisine. ‘dinner with THE BAKER’ is pretty special to me in a couple of ways. There are now two Locantro stores in Sydney and one of them is my local so I’m pretty lucky to get to eat Pino’s award winning pastries, cakes, pies and sweet treats often (and probably more often than is good for my waistline).

Pino Locantro has been a pastry chef for more than 20 years. It’s Pino’s first book and he’s done a mighty fine job of it, with not only sweet and savoury recipes such as Passionfruit Tart, Hot Cross Buns, Mamma Francalina’s Biscotti and Roast Pumpkin and Fetta Cheese Loaves – there’s also basics such as sugar syrup, custard and chocolate shortcrust pastry. I’m loving the section on equipment and tools too which – with the basics and recipes – will help turn you into a (nearly award winning) pastry chef at home.
