Christmas Crumble Slice

Here’s a delicious treat I like to bake for Christmas. A couple of years back I thought I’d adapt the family jam slice recipe ‘Raspberry Crumble Bake’ by changing the jam in the recipe to fruit mince. I’ve been making the ‘original’ for so long that it was just a little note of ingredients in my book with no instructions. When I adapted the recipe for Christmas I just replaced the jam with fruit mince, and so it goes without saying the recipe for that is not really written down either. Here’s my attempt at sharing it with you. I think I like this even better than the jam version. Best served cool. And it will last a few days (if you can keep hungry fingers away).

Christmas Crumble Slice

Preheat a moderate oven and grease a 30cm x 20cm (12″ x 8″) slice tin (deep baking sheet). I also like to add baking parchment to the bottom of the pan.

12oz (340g) Self Raising Flour
1 egg
6oz (170g) butter
3oz (85g) sugar
approx 1 x 410g jar of Robertsons fruit mince (or make your own)
1 level teaspoon ground cinnamon

Mix the flour, ground cinnamon and sugar, crumble butter through with your hands add egg and mix well. Cover the slice tin with a bit over half this mix to make a base. Press firmly. Spread the fruit mince over the base. Crumble the rest of the mix loosely over the fruit mince. Bake for about 20 minutes or until lightly golden.

It looks lovely cut in little squares then dotted with a half teaspoon quenelle of mascarpone, or a teaspoon of lightly whipped cream. Ginger in the cream or a drizzle of ginger syrup is a delicious addition. And it’s good with custard (hot or cold) or zabaione (and the same – temperature options).

If you want to make the ‘original’ recipe, replace the fruit mince with raspberry (or other) jam. The jam slice recipe suggests 4 rounded tablespoons as the quantity. I’m a little more generous – I use about double that quantity. Though as it’s a filling it’s not one of those things that you have to measure.

    Great idea! Less fiddly than making individual mince pies. This close to Chrissy, need all the help I can get :)

    Another wonderful recipe! Nice perhaps than stodgy fruit mince pies, which are not really my thing.

      thanks Lizzy … had some lovely mince pies during the week at the launch party for Westfield Christmas Cracker.

      made by Becasse Bakery they were an open tart with just a tiny wee spoonful of fruit mince, lovely pastry but lightened with some fresh berries and indulged with a little bit of gold leaf

      my Christmas Crumble Slice came about because I really do love the original jam slice recipe (Raspberry Crumble Bake mum used to call it)
