Smoked Salmon Mini-wraps

You might be already following the recipe posts my 2010 Australia Day party at home. Whether you’ve already seen those posts or not, don’t you think it’s just a great idea, to bring a plate and swap recipes? And, it’s also a great way to introduce guests and help them make new friends. All the guests agreed to share their recipes online too: kind of our C21st update on swap the recipe with a neighbour over the kitchen table and a cup of tea. Here’s the recipe from Jo and Robert Rixon for their delicious Smoked Salmon Mini-wraps. They chose this dish for the party because it could stand on its own as a starter, or sit comfortably with other dishes on the buffet. We all agree, it was delicious!

Smoked Salmon Mini-wraps

(Alter the proportion of ingredients to suit your taste)

1 packet mountain bread (8 slices)
400g smoked salmon, finely sliced
1/2 red onion, finely diced
2 marinated artichoke hearts, finely chopped
1 pear, grated,
1 bunch rocket, torn
2 tablespoons plain yoghurt
1 bunch dill, chopped
salt and black pepper (to taste)

Mix the salmon, onion, artichoke, pear and rocket until well combined.

Add the yoghurt and dill, lightly season to taste and mix again.

Divide the filling evenly between the 8 wraps. Roll up each wrap and once done, cut into half on a diagonal and place onto a serving tray.

Enjoy with champagne or dry white wine.

    Will make a twist on those Smoked Salmon Mini-wraps for Sunday’s brunch & also serve it with Sake instead. Cheers!

    The addition of pear would take this recipe over the top…EXCELLENT!
