Year of the PIG?

There are banners flying each side of the main street of Sydney. Later this month will bring in the Lunar New Year. And, then it will be the Chinese Year of the Tiger.

Now, I thought I’d do something different. TIGER is not my year! So, because I’m born a PIG ~ my toast for the Lunar New Year ~ will be BACON

Zeta Bacon Manhattan (off the Zeta list)

70mls Bacon Infused Bourbon

5mls Sweet Vermouth
5mls Dry Vermouth

1 teaspoon Maple syrup

2 dashes bitters

Dash cherry juice

- Shake strain into a Martini glass & garnish with a cheery and crispy bacon strip

I was wondering about the bacon infused Bourbon! So I asked Bar Solutions.

“Infuse 90mls of bacon fat in ¾ of a bottle of premium bourbon, put in the fridge for 8 hours then put in the freezer for 4 hours. Then using a fine strainer,  remove the fat. Bacon infused bourbon can be found at Zeta Bar, Sydney.”
